Peri-Peri Chicken Salad with Marbrin Farm

For the winners of the 2016 Absa Top 5 South African Extra Virgin Olive Oils, we are sharing recipes perfectly paired with each. Marbrin Farm’s Intense EVOO shows flavours of: green grass, salad leaves, green veg, herbs & walnut, well balanced, aniseed, complex, green fruit, pine needle, nettles, minty green apple and aroma, butter lettuce, rocket & baby salad.

Favourite, local chef Alida Ryder shares her “who-wants-to-cook-in-this-heat” recipe in anticipation of Summer and we think it’s perfect drizzled with this week’s #AbsaTop5 winner feature.


Serves 4.

INGREDIENTS

FOR THE PERI-PERI CHICKEN
  • 4 skinless chicken breasts (sliced in half lengthwise, giving you 8 thin chicken breasts)
  • 2 tablespoons peri-peri sauce
  • juice of ½ lemon
  • 2 tablespoons olive oil
  • 2 teaspoons honey
  • salt & pepper to taste
FOR THE SALAD
  • 4 ears of corn
  • salad leaves of your choice
  • ripe avocado, sliced
  • olives
  • cherry tomatoes, halved
  • feta cheese, cubed
  • olive oil (Marbrin Farm’s Intense Extra Virgin Olive Oil)
  • juice of ½ lemon
  • salt & pepper, to taste
