ABSA TOP 10: De Rustica Olive Estate

Following the announcement of the 2017 #SAOliveAwards & #AbsaTop10 Olive Oils Awards in South Africa, we are presenting a series of interviews with each Gold winning producer.

Judges Feedback: Beautiful fresh green nose, herbaceous, lovely well-rounded flavour, good fruit, good bitterness, well balanced.

Pairing: Perfect drizzled over potatoes, Fish, Pork and Roast Chicken. This Coratina makes a lovely Cashew nut sauce and Chocolate Ice Cream.

Pairing: Suitable for almost anything, grilled vegetables and meats, pasta, dipping bread and for vinaigrettes, etc.

Name: De Rustica Estate Collection:  Favolosa
Cultivars: Favolosa
Litres Produced: 500 litres

Pairing: Perfect for drizzling over vegetables, pasta and meats, especially Venison and Duck.  Suitable for Ice Cream, sauces, dips and Marinades. This Favolosa makes a lovely Citrus Sauce.

About De Rustica Olive Estate:
De Rustica is situated in the Southern Cape in the De Rust area, close to the town of Oudtshoorn. The climate is ideal: cool winters where snowfall covers the overlooking Swartberg mountains but lower valleys remain frost free, and hot summers where fruit can set and grow. To date, we have planted 125 hectares of olive trees on the estate.  Our carefully selected Italian cultivars are hand-picked and pressed on the estate.  The microclimate at De Rustica is uniquely suitable for producing world-class extra virgin olive oil.

Producer History:
De Rustica was founded by Mr Rob Still, a successful South African mining entrepreneur. Mr Still has always loved olive oil, and has always had a great love for and knowledge of trees. He commissioned a study to establish the optimum place to establish his olive farm. After extensive research and chemical analysis of soils, the study showed that the Klein Karoo, with its cold winters and warm summers, would best suit his olive trees and so he set about finding the right farm. He bought the Oude Muragie and Le Roux farms upon which the estate now rests.   In late 2006 he began to plant his olive orchards and in 2008 he extended his olive orchard footprint with the acquisition of the Grootkruis properties too.

De Rustica is constantly improving its methods, equipment, and standards in an effort to continue producing world-class extra virgin olive oil and is gratified that these efforts have again been recognized. Although De Rustica is a young producer which has been in operation only since 2012 its products have been awarded top prizes since 2015.  De Rustica olive oils also received awards in two international competitions.

Oil Makers:
Ignacio Segura, is the consultant of Olive Oil Consultancy in Spain and Abraham Londt. Ignacio assisted us with advice and knowledge throughout the year and at the beginning of the harvest we learned to get the best out of the olives. He taught us techniques and showed us what to strive for to ensure the best olive oil extraction. Abraham has been with us for a year and has put his own mark on made the production and quality of our oils. The harvest was small and the season warm, which gave its own challenges to get the quality we strive for.
