About Chaloner Estate:
Falcons’ Nest is situated at the foot of the Stellenbosch Mountains in the beautiful Blaauwklippen valley. The farm benefits from decomposed granite soils which gives our oils their special flavours. All farming is done on a Biodynamic basis with minimal intervention and the use of organic fertilisation where possible.
Chaloner has been producing fabulous extra virgin olive oils since 2013, when we received our first gold medal for our Chaloner Blend. We also produce a range of crafted premium pasta sauces, marmalades and jams using traditional recipes and specially selected raw ingredients.
Oil Maker & 2018 Harvest:
The oil is made by Perry Chaloner, ably assisted by Spencer Muparuri. This year was a challenging year due to the drought. The early oils, particularly the FS17 were initially very astringent (though had incredible aromas), but have mellowed over the last few months. The Nocellara had the benefit of being one of the last cultivars to be harvested so it was less affected.
