Bruschetta is an antipasto from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt.


BRUSCHETTA

• 1 baguette French bread or similar Italian bread
• 60ml Extra Virgin Olive Oil

Preheat your oven to 230°C. Cut the bread of choice on the diagonal making 2cm thick slices. Brush one side of each slice with a generous amount of Extra Virgin Olive Oil and place the olive oil-side down on a baking sheet or roasting pan. Once your oven is preheated, toast slices for 5–6 minutes on the top-most oven rack until browned around the edges.

SALMON TOPPING

• ½ small tub smooth cream cheese
• 300g smoked salmon trout ribbons
• 1 squeeze of lemon
• Rocket or watercress leaves

AVOCADO TOPPING

• 1 large avocado, peeled and sliced
• 1 squeeze of lemon
• 1 red chilli, thinly sliced

SPICY OLIVE TOPPING

• ½ small tub smooth cream cheese
• 100g feta cheese, crumbled
• 180g table olives, pitted and halved
• 1 red chilli, thinly sliced

FRESH TOMATO TOPPING

• 1 punnet of cherry tomatoes, sliced
• 60g basil pesto
• Fresh parsley, finely chopped

FINISHING TOUCHES

Add a small pinch of sea salt and freshly ground black pepper on each slice then drizzle with Extra Virgin Olive Oil.
