• 3 cups cake flour
  • 1 tsp sea salt flakes
  • 1 1/4 cups icing sugar
  • 1 Tbsp chopped thyme leaves
  • Zest of 3 lemons
  • 1 1/4 cups EVOO


Preheat the oven to 150C & line a baking tray with baking paper.

In a large mixing bowl, add the flour, salt & icing sugar & mix well.

Add the thyme, 🍋 zest & EVOO & mix to form a soft dough.

Turn the dough onto a clean surface and press down to a 2-3cm thickness. Use a mini cutter to form buttons & place onto a baking tray.

Bake for 10-15 minutes, or until cooked through. The biscuits will remain quite pale. Place onto a cooling rack to cool & repeat with the remaining dough.
