Olive Puff Ingredients:

Pinch of Salt
2 Cups Cake Flour
2 Tbs Castor Sugar
2 Tbs Minced Olives
1 ½ Teaspoons Dry Yeast
Pinch of Ground Nutmeg
1 – 1 ½ Cup of Tepid Water

Method:

  1. Sieve your flour, mix all dry ingredients together in a mixing bowl.
  2. Create space in the middle and gently add in the tepid water.
  3. Mix with a wooden spoon until it become a thick dripping batter
  4. Add minced olives and mix together.
  5. Cover your bowl with clean wrap and keep in a warm area to prove for about 30 – 45 mins until double in size.
  6. Put a frying pan on the stove with seed extract and extra virgin olive oil, heat until ready to deep fry.
  7. Take the proven dough and create balls, place in pan and fry until golden brown.

Olive Dip Ingredients:

1 Cup Cream
1 Clove Minced Garlic
1 Tbs Minced Olives
1 Tbs Extra Virgin Olive Oil
Pinch of Salt
Pinch of Pepper

Method:

  1. Put a tablespoon of Extra Virgin Olive Oil in a saucepan
  2. Add your minced garlic and then your cream – bring to a boil
  3. Add in your seasoning and your minced olives
  4. Remove from heart
  5. Serve with Carpaccio, baby leaves and Parmesan cheese
