Ingredients

  • 1/4 cup olive oil
  • 2/3 cup sugar
  • 3 eggs
  • 1/2 cup yogurt
  • Juice of 1 orange
  • Rind of 1 orange
  • 1 tbspn fresh thyme
  • 1/2 cup almond flour
  • 1 1/2 cup flour
  • 1 tspn baking powder
  • Pinch of salt

Method 

Preheat the oven to 180C
Beat the olive oil, sugar and eggs until they reach a pale colour. Add the yogurt, Rind and juice of the orange, almond flour and thyme. Mix until well combined. Add in the flour, baking powder and salt and fold in the ingredients till just combined. Pour into a tin lightly greased with olive oil and put this in the oven to bake for approximately 30mins or until a skewer comes out clean.

Glaze

4 tbspn icing sugar
2 tbspn olive oil
3 tbspn of water
Mix this to form a thick glaze and drizzle over the cooled cake.

Garnish with more sprigs of thyme and edible flowers. Serve with your favorite people with a warm beverage.
