Short introduction to the oil maker & his/her comment on the 2020 harvest: Klaas Stoffberg started producing EVOO at Babylonstoren in 2015. As a qualified winemaker, he focuses a lot on taste and plays around with different factors to build complexity. The main focus is to produce the best oil with minimum intervention.

Tasting notes: BOUQUET: Lovely gentle aromas – with a hint of florals and fresh herbs, especially mint. TASTE: A good mouthfeel with nuts and herbs on the palate followed by medium intense bitter and pepper flavours, making a very harmonious oil, perfect for most culinary adventures.

Best paired with which food: Best enjoyed drizzled over seasonal salads or soaked up by chunks of fresh bread.
